Delmonico's in Lower Manhattan claims to have invented Eggs Benedict in 1860. Charles Ranhofer, one of its former chefs, later published a recipe for a similar dish called "Eggs à la Benedick" in 1894, adding historical weight to the restaurant's claim.

An alternate story says that in a 1942 New Yorker interview, Lemuel Benedict, a retired Wall Street broker, claimed he ordered a unique hangover cure in 1894 at the Waldorf Hotel: buttered toast, poached eggs, bacon, and hollandaise sauce. Impressed by the combination, maître d'hôtel Oscar Tschirky added it to the menu, making a few modifications—substituting ham for bacon and an English muffin for toast—creating what we now know as Eggs Benedict.
