Billie Tsien’s low-alcohol cocktail is intended to be a light and zesty counter-balance to the weighty strength of Toby and David’s mid-century Old Fashioned.
Peel a lemon completely, cut into a cube shape, and slice into thin cross sections. Squeeze a lemon peel into a Collins glass and fill with ice. Add all ingredients. Stir and garnish liberally with square lemon slices.
Cayenne agave syrup:
Add 2 tablespoons cayenne pepper to 1 cup agave nectar. Add 1 cup water and simmer 5 minutes. Strain through coffee filter.
